Thank you. This is it. If you add a teaspoon or two of butter to the pot it breaks the surface tension and very little if any foam forms. Thank you so much. I have been looking for this recipe without success for ages.I realize this post is old, but if anyone is interested, this may be similar:
Strawberry-Pineapple Jam with Orange Zest
Ingredients:
1 quart strawberries
20 oz. can crushed pineapple, drained
2 tablespoons fresh lemon juice
2–3 tablespoons grated orange rind
1¾ oz. package powdered pectin
5 cups sugar
Instructions:
1. Wash and hull strawberries.
2. Crush strawberries slightly and place in a large, heavy kettle.
3. Add drained pineapple, lemon juice, orange rind, and pectin. Mix well.
4. Bring to a boil over high heat. Add sugar and mix well.
5. Return to a full, rolling boil. Boil hard for 1 minute.
6. Remove from heat. Stir and skim foam for 5 minutes to cool slightly.
7. Ladle into sterilized jars, leaving appropriate headspace.
8. Seal and process in a boiling water bath as per standard canning procedures.
It is. It is the best jam I have ever made, plus it is very pretty so it is perfect for gifts. I originally found it years ago in Farm Journal. It was called Heavenly Jam, and it is. I lost the recipe, and I could never find it. I am so glad to have it now.Sounds wonderful!
