Tapioca pudding recipe wanted

Anybody have a box of tapioca in the cupboard? There is a good recipe for tapioca pudding on the box. I did not buy the last batch of tapioca. My SO other did. I don't know where he got it, but he got it in bulk, so there is no box, no label, and no recipe. I wanted to cook up some tapioca pudding for him. He hasn't been eating very well lately, and I am hoping some tapioca pudding will go down easily. Thanks.
 
I have a minute tapioca box in the cupboard.
1/3 C Sugar
3 Tbsp of minute tapioca
2 3/4 Cup milk
1 egg
1 tsp.of vanilla

Mix sugar, tapioca, milk, and egg in saucepan, let sit 5 minutes
Cook on medium heat stirring constantly until it comes to a full boil, remove from heat stir in vanilla.
Cool 20 minutes, serving warm or chilled.
Note: for creamier pudding place plastic wrap on surface while cooling.

Fluffy Tapioca Cream

1 Egg whilte
3 tbsp. Sugar
3 tbsp. Minute Tapioca
3 Tbsp. Sugar
2 c. Milk
1 Egg yolk
1 tsp. Vanilla

In mixing bowl, beat first two ingredients until soft peaks. In saucepan, combine next four ingredients, let sit 5 minutes. Stirring constantly, cook on medium heat until mixture comes to a full boil. Remove from heat, add remaining ingredient and stir well. Quickly fold egg whites into tapioca pudding. Cool 20 minutes, spoon into dishes, serve warm or chilled. Enjoy!
