Texas

I made this this morning. Have not tried it yet, but it sure smells good! I changed up the recipe a bit and used cinnamon applesauce in place of the butter and added a 1/2 tsp cinnamon to the batter. Can't wait to try it. Letting it cool more first. :)

Apple Cinnamon Bread

1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled and chopped

Preheat oven to 350 degrees. Grease and flour a 9 x 5-inch loaf pan. Mix brown sugar and cinnamon together in a bowl and set aside. Beat white sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla extract. Combine flour and baking powder together in another bowl; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan. Next add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using a finger or spoon. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, 30 to 40 minutes.

I had that happen. It was the heating element.

Bread is really good. Supper moist since I used applesauce. This won't be around long.

That's good news! I don't think a heating element is too pricey....
Definitely cheaper than a new stove!
I'll have to save that recipe. I got a new loaf pan for Christmas and haven't been able to use it yet!
Maybe this will be it's first loaf! Lol

Don't think I can have a rooster. I was working under the live and let live philosophy. Then it killed my chicken. I figure it is my fault for having the automatic door set to open too early and the coon just happened by late. The girls are being hesitantly about coming out in the mornings. They stay in the chicken yard, where before they would be out foraging or at my back door. So I think in happened in the early morning cause the scene was fresh.
I won't kill the raccoon, but he will be relocated.

Personally, I think it is the cold wind that is keeping them inside. I haven't found too many animals that are traumatized for long after the violent death of a flock/herd mate. There is the possibility that the predator is still around, but I think the weather has more to do with it. My own chickens are behaving the same way, and none of them have been attacked. Just my 2 cents worth.

Oh! By the way, I have to brag a bit. My "girls" are getting so big! They're not even 2 weeks and, although they're going through a bit of an ugly duckling stage, I am just in awe of them.

Sounds silly, but they're getting so big and curious. They run to the side of the brooder when I get home, towards me

Pearl, one of my Easter Eggers, has mastered jumping up on the side

So I'm ordering them a bigger space. I'm just so excited, they're growing so well and feathering out beautifully.
Hubby is convinced my single Barred Rock, Freya, is a roo. I told him it's waaaay too early. I hope she's not, she's one of my sweeter chicks.

No coffee for me. I have some on hand for friends and family that like it though.

I may have to order one of those too. I keep reading about how wonderful they are and safe too. I also keep hearing about fires started by heat lamps. :(

Don't bother with making coffee. Just milk or water and your friendship!

Lisa :)
