Or you can give those eggs to a needy family or elderly person in your community. If you ask around you can usually find someone who is having a hard time putting food on the table this winter and would love the extra nutrition.
I do that Bee, but I haven't been out with the cold and snow for a good while. The last time I was out I took my extras to my FIL when I took him to the doctor. He loves them.

I have a couple of folks who buy the pickled eggs, too.
 
I've been giving our extras to family too, though the Lord knows they don't "need" them more than other folks. If I had a bigger flock and could generate more eggs at a time I'd see how the homeless shelter in town feels about fresh eggs. Some places can't take any food unless it's USDA approved, so it's always iffy if food pantries and shelters will take egg surplus. I used to give mine to my patients and the local food pantry where I lived last but I don't even know of a food pantry around here.
 
Well, my father is on a VERY fixed income following financial destruction by his other granddaughter(not my daughter). But that is another story.....I've got 10 mixed breed pullets that were supposed to be in the freezer by now, so I will get them dispatched which will help with the excess....and the feed bill. I've wanted to grind chicken for tacos, chili, etc, so I might use them for that purpose. I haven't decided yet.

Hey Bee, what do you think about grinding chicken, packing it in pint jars, then pressure canning? I was thinking it would be nice to having it ground and cooked and ready to open to use.

I know I talk a lot...right now it's all I have to do with my time(you have no idea what a blessing it is for me to say that...my whole life my time has not been my own) and my time is growing short. Come spring you'll not hear so much of the talking, as I will be out doing projects.
