Not to sound negative but Poultry Hollow is well known for selling what he has not what you want.I went up for a second hatchery type buff bantam Cochin so my kids could quit fighting over the one we have..it was an obvious large not bantam and he got less than nice when I kept insisting it was a large..my son didn't care and we brought her home..she's not bantam
I recently heard from a newer chicken owner that went up for a Dozen Delaware..he had them no problem. All are White Rocks not a Delaware among them so beware when you go.His Ameraucana are Easter Eggers like most back yard farmer breeders.
I could go on and on with customer complaints...from not selling what they want-once they figure it out to his answers of questions they ask.He has hatchery quality birds as welll which is fine as long as that's what you want.
Getting new hatch chicks vs older chicks doesn't mean they will be friendlier birds.Much of that is in the breed and breeding. If you have a flighty breed like my leghorn ladies you can play all you want with them as chicks and as tweens and adults won't be your cuddle pets but will hang out with you.Take a Cochin or a Wyandotte and it doesn't matter when you get them they will be your friend. We don't sex our chicks but here all of our chicks are child handled daily so even those sold older are used to riding in Barbie cars and trains
just depends on where they come from on the handling they get.Breeders spend more time with their birds than hatcheries do so your more apt to get older handled chicks from them.
