Bread is just about my favorite food, which is why I no longer keep sourdough starter in the house. I'd be eating it all the time!

Here's the recipe:

Parmesan Crusted Tilapia

1 1/2 lbs. tilapia or snapper filets
3 Tb. mayonnaise
1 Tb. lemon juice
1/2 t. salt
1/2 t. pepper or lemon pepper
1/2 c. freshly ground parmesan cheese
1 c. panko bread crumbs
1/4 c. butter, softened

Preheat oven to 425 degrees. Line baking pan with foil and spray with cooking spray. Pat fillets dry before placing on pan. In a small bowl, combine mayonnaise, lemon juice, salt and pepper. Spread this over top of each filet. In another small bowl, combine parmesan cheese, bread crumbs and butter. Spread evenly over mayonnaise mixture on each fillet and pat into the mayonnaise mixture. Bake for 15 to 20 minutes or until fish flakes easily with fork and top is golden brown.

Definitely a meal I would enjoy!! Need to check the freezer; I know there is salmon, will look for a white fish. Oh I think there is some whole tilapia. Extras, after cleaning, for the chickens me thinks.
 
I know what you mean -- perhaps we could try it and place it on a little rack on the pan.
 
SCG---I specialized in making homemade breads for most of my life just so I could eat delicious breads--unfortuantely that also turned me into a pig, LOL, on many levels. So out with the breads and potatos, and most grains. Just meat and vegies now, and wow do I feel energized!!
Me, too! I love making bread, and I still make it for gifts sometimes, but I don't eat any gluten (or dairy, but that's a different story). I still eat potatoes occasionally but I'm pretty much grain-less. I eat nuts, fruit, vegetables, eggs, and meat (after being vegetarian for a few years). I feel fantastic and have never had so much energy in my life.

Isn't it great to feel so much energy???? I feel at least 20 years younger.

I would never survive as a vegetarian--love a good steak and rich turkey thighs.

I tried going dairy free after someone suggesed dairy causes thickening of the mucus in the nasal passages.On the Easter Hatchathon, I think. I found it hard to give up yogurt and cheese. (Milk I gave up years ago). Not sure of the effect--so many other variables.


Nuts, herbs, eggs, spices, berries, oo, butter, salads , beef, fish mayo. . . . .. . Delicious.

I have avoided going to THanksgiving and Christmas family dinners as the meal is so laden with high carb foods. No one understands that they are the kiss of death for me. I can keep my BP normal with a low carb diet or eat high carb and watch my BP rise. I'm still with in normal (120/80)so the docs never say anything--it is too high for ME. I like 115/55 much better.
 
"The oldest two are grounded because they got into a fist fight while I was at work last week. The youngest one told on them. I like it when they are grounded. I get my flower beds weeded!"

We call this "dung duty" at my house. Depending on the trouble they are on I will sometimes bring the horses into the front yard to assure they do not run out of things to do! Usually there are only a few pot bellied pigs im the front yard.

And went blueberry picking today as well, then down to The Lobster Shack at Two Points Light (you eat out on the rocky bluff between two lighthouses). I'm now making a pie with the blueberries while they rest.

They are loving it. I could use a nap.
