Word of advice on pressure cookers, we use one often, and yup the new ones can't be opened under pressure, safety lock. A buddy was canning venison, didn't feel like waiting for the pressure to go down on its own, he had more quarts to do(yes we were drinking) and took the weight off the top, I do that too, just use a potholder and move quick. Then he put it in the sink and ran cold water on it. Turned the water off and removed the top. Some of that cold water on the lid hit the 240°F jars and booom! He was wearing it, burned him pretty bad. Don't do that!
