The Old Folks Home

We had fish tacos in Mexico (Akumal) on our honeymoon 25 years ago. They were excellent. Not battered though. That would just be wrong.

Um, cilantro is NOT optional! In fact it is what makes Pico de Gallo, Pico de Gallo! The more the better. Of course I am not one of those unfortunate people that taste soap when they eat cilantro. I can see not wanting to eat it in that case.

Yummy!
Lol! It didn't taste like soap to me, just was weird IMHO, never ate fresh cilantro like that, piled on. Was a little over the top I thought. You know what though, cleaned my plate, I always do. Waste not want not. I'll eat about anything, only off limits that I can think of is balut, and rocky mountain oysters.....

Skipped through, happy birthday everyone.

I made tortilla soup yesterday. The recipe has a quarter bunch of cilantro in it. It definitely needs it too.

Hint: The soap taste goes away after you get used to eating cilantro. I do not think it is a soap taste so much as a different taste. I used to hate it but now actually love Cilantro.

From Diana Rattray, Your Guide to Southern U.S. Cuisine.

Prep Time : 10min
Cook Time : 1hr 10min
Type of Prep : Blend / Process, Simmer
Cuisine : Southern
Occasion :

INGREDIENTS:

  • 1/4 bunch cilantro, well washed (leaves only)
  • 2-3 garlic cloves
  • 1/2 small onion, chopped
  • 1 small can of green chilies(fresh chili: Jalapino, 2 Serrano or 1/2 habanero..or etc.)
  • 6 cups chicken stock/broth
  • 1 (14.5 ounce) can tomatoes
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 2 tbsp. cornstarch dissolved in a small amount of water
  • Corn tortillas (about 10) cut into thin strips
  • vegetable oil
  • 1-2 cups cooked chicken (2 oz. per serving)
  • Monterey Jack cheese (1 oz. per serving)
  • 1-2 avocados, peeled, pitted and sliced
PREPARATION:

Puree cilantro, garlic, onion, chilies, and tomatoes in a blender or food processor. Heat stock and add pureed mixture into cumin and salt. Bring to a boil, reduce heat and simmer about 1 hour. Stir dissolved cornstarch into stock. Often I don't add the cornstarch since I like a thinner soup.
Fry tortillas in oil until crisp; drain well. Add chicken to stock and garnish with shredded cheese, tortilla strips, avocado, sour cream, salsa, or whatever else you prefer.

THANKS TO ALL YOU WONDERFUL BYCER's FOR THE GREAT BIRTHDAY GREETINGS, WISHES AND CAKE AND CAKE AND ICE CREAM, AND MORE.

After several days of 2-3 hours sleep this week, I lost nearly the entire day Friday napping. Just got up at 1 am(SAT) to discover I hadn't eaten anything. or taken my meds. . But wanted to come here first.

Good you caught up on some sleep, I guess, but not so good on the rest of it. We need you to take care of yourself better than that - we want you around for a lot more birthdays.

I don't know, but it has all myDr.'s turning red in the face. I am trying to cut out everything I can to get it lowered. I told them I will not take the shots. The pills give me all kind of problems when I try to take them.
Are the pills stains or niacin? Niacin can cause hive like reactions and stains can cause muscle damage.

Dr.s do not go much into nutrition and exercise but both of those can really help with cardiovascular issues. Try walking for 20 minutes twice a day--if you can. Build up to it if possible. Some new studies I have seen say that exercising more than 30 minutes can cause damage and will not help any way.

If your insurance will cover it, see if you can see a nutritionist. You local medical group should have them there.
