Ron, practice makes perfect, and the failures are still delicious. Keep at it with the cheddar. I'm sure you will get it perfected.

I will make cheddar again. That one takes a lot more work with the cheese press; more and longer times. I need to get a press that goes up higher in pounds of pressure

Ron, stay indoors too. That smoke is very hard on the lungs when intense, and constant. Praying you stay safe.

It is hard to breathe in the smoke. I will stay out of it as much as possible
 
I had total bilateral ovarian hysterectomy in 1984 to keep me alive that meant no female hormones left either I like my Grandmother and Mother have a beard and mustache not heavy my eyebrows of today are pure white 58 all my hair is white I have a electric women's razor I use every morning BF say's he does not see it even if I forget he is a keeper
 
It then goes into the wine cooler for 30 days at 55F
