for jelly, after doing the boiling and jar sterilization, she would always cover the top with melted wax.

We used wax growing up too. The jelly did not spoil but I do not think it is allowed any more.

I think the wax was mainly used in stead of a lid in the olden times. You get a nice protective layer on top.
