We had rain all night again. The runs have graduated from quagmire to swamp but the chickens don't seem to mind which is just bizarre. I considered leaving them penned up today but the secondary coop is just to small so they are happily slogging around looking for bugs.
 
"If you can't say nuthin nice, don't say nuthin at all". I will be quiet about hominy.
I hominy in posole. Otherwise not so much!
 
And on a sadder note, it appears there is another hurricane inbound, this time for the central gulf coast. Just what we need on top of Harvey and Irma... Hope any in its path are prepared and suffer little to no real damage.
I just read that a state of emergency is being declared for the Gulf States that will be hit but the new hurricane
 
I wonder if there might be a type of beans they would like better.

I like black beans a lot and navy beans come out creamy. Black eyed pees are kind of between beans and pees.

Ok, I guess I have had too much beans!

Red beans for chili and of course great northern white beans for ham beans....I pressure cook some type of beans several times a month
 
I prefer pinto beans in my chili. I love a ham hock, with great northern beans, and cornbread. Dh hates beans, so I don't really have them too often. When I do cook a big pot of them, I invite other members of my family to come eat, so they don't go to waste.
 
My mom used to make soup with northern beans and ham it was a creamy soup and very good. I have tried to make it..... Not even close.
Bean tricks:
Soak overnight and rinse
Cook with salt or the beans can fall apart
Get a real smoked ham shank
A cool trick is to use smoked pork neck bones

Likely the creamy texture came from either a ham shank or from the old trick of adding a bit of bacon grease to the beans. Old timers kept a bowl of bacon grease next to the stove for this purpose....It was a great thing to do!
 
Hominy is one of those southern dishes I remember from growing up, also. It's okay IMHO. The way I make it now is with scrambled eggs mixed in to it. SIL turned me on to the recipe and while my SIL and I get along best with a lot of miles and no communication between us, I have to admit I do like hominy fixed that way.

We love beans here and I try to incorporate black beans into as many recipes as I can. They seem to be our favorite. I make enchiladas mixing ground sirloin with the black beans for the filling. That way, we use less meat and get more fiber in our diets.

Yes, fighting high cholesterol without medication is a nasty, smelly business.:sick

Try drinking a serving of flax seed powder(ground up--humans cannot digest whole flax seed) in half a glass of water at night before bed. Got my triglycerides down to below 150 that way. Started at over 300
