I pressure cooked beets last time. They turned out great!

I used the Instant Pot (pressure cooker) to process my beets for canning. Great to have them ready to go in 12 minutes! It made light work of a lot of beets. (25 pints)

Our favorite way to eat beets is process them (steam/boil), slip the skins, dice and then set aside. In a saucepan reduce some balsamic vinegar to almost syrupy. Add a hunk of butter and some sliced green onions. Stir, add beets, stir again and serve. Sprinkle salt and pepper on top if you desire. YUM!

I tried changing up the beets buy my youngest DD likes them plain! not salt just the steamed or pressure cooked beet.

I love fresh beets!

I hope he recovers well from it. Will he have to have reconstruction surgery later?
No, we were lucky. They kept having to excise more at the top of the incision so they were able to maintain the 'football' type wound that they like to work with. They were worried that if they would have to excise on the exterior margins they would have to do a skin graft but they kept putting in temporary sutures between MOHS sessions while they did the pathology on the latest sample and drew the margins together stretching the scalp so when they were ready to close they were able to draw the margins together. He laughing says that at least his bald spot is smaller now.

DH came home with a T shirt that they gave him to wear as his shirt managed to get pretty bloody. It says "GET NAKED! MELANOMA KILLS!"

I had to have 2 rounds of mohs for a spot(Basal) on the tip of my nose. And some small skin graft that took some from near the eye. The stitches really irritated my eye and my nostrils were small on one side and bigger on the other. But it seems to have stretched out some. I get furious when people don't protect themselves. NOSES are out everyday of the year. And ears are another common place and LIPS.

I had noticed a small spot that wouldn't heal. It kept getting a scab, scab would fall off and still raw underneath. I had a few dr. appts. that year for other things and I would start out by showing the nose to every single doctor. They ignored it,I found out later none of them had mentioned it on my chart.

One dr. decided I had mild rosacea and gave me stuff for that. I told him I had that most of my life and luckily it didn't amount to anything. But he thought that was important and not a sore that wouldn't heal on my nose. Right away I had thought skin cancer OR diabetes ie, sore that wouldn't heal.

One day I suddenly realized I had that sore for a year and nothing was done. Went back to doctor. They are all residents, and got someone else. I had a hissy hit about having it ignored by drs. before her. So at least she looked at. She said she could do a biopsy in the office or send me to a dermatologist. Knowing how the doctors at this clinic had goofed up me, my son, my father I chose the REAL doctor.

He did the biopsy and I felt I must be okay. A couple days later the nurse said I needed to come in for mohs surgery. I would have been scared too death but this doctor was very good. He explained everything he would do, how it would feel, smell, etc. nothing was a surprise. The men seemed to be the worst patients.
He'd say this injection is going to sting & they were very vocal. The woman didn't make a peep. I guess we are used to pain(monthly and other stuff). I just prepared myself that it would sting, it did, and was no surprise.

I had 2 courses of mohs, the lab was in the same building. In about hour he had the results. After the second round he said the margins were clear. He had me come in a short time later to check the healing, then set up regular recheck in 6 mos. UNLESS I noticed something that wasn't kosher before then. After that I have a full body screening once a year.

He said I could have laser work down to smooth the site. I told him I'm not vain, but, if he was having a free day I would consider it. I'm old but, I feel like the scars or wrinkles or whatever we end up with, are proof of what we survived. So It doesn't bother me. I haven't turned heads in a long time, unless toilet paper is hanging from my waist band. So I just don't care.

I will say I use sun block (in winter too) unless I am wearing a face mask (like now in bitter temps) I wear SPF 50 long sleeved tees when not wearing a jacket. I wear denim jeans all year round, no flip flops etc. and WIDE brim hat , once warm weather
knocks out parkas.

Sad, heck no! I'm happy for you! You have a very nice and loving friend that sent you that special bee rock. And took the time to make it near impossible to get out as your father would have done. @dsqard or @Wisher1000 maybe??

Dang it, Bruce! Here I am, thinking I'm all 007 or Secret Squirrel, or something, and not only did SCG know who sent the gift without a return address, but you knew as well. I am going to have to start being less predictable.
