By golly, I will. Is there a size limit for going full convection, like something being too small? Oh, the manual mentions not covering foods when cooking at full convection, but it only talks about cooking larger things that way. Should I try a roast, whole chicken, etc. full convection without covering them, or are they too small with less fat, and juices?
Size does not matter with convection baking. Pretty much anything that is not covered.

Cookies and other baked goods turn out wonderful! and roasts and chicken are very good bake that way
 
My in-laws had a huge brick oven wood fired bakery, switched last fall to a commercial convection oven. Wood is a heck of a lot cheaper but they are getting old and hard to keep it going 24/7 all yr whether they use it or not they have to feed it. They bought a used old convection oven, natural gas, was told it would cost them around a thousand $$ to convert it to propane (might have included a tank and fill up for that $$ I hope?, still nuts) I don't remember what I said to them but somehow I got recruited into converting it, took hours of dismantling it and reassembly just to change the two pilot lights and two orifices, and a lot of googling. Think it cost around $30.
I didn't think their breads, rolls, would compare to the brick oven, baked hot and fast in there, turned out no noticeable difference, the convection oven works good. And they don't have to cut and split wood and feed it all day long for the little use they have for it now.

You know Clue... I just can't believe how good these things are as described... You're gonna have to send out samples for me... I mean US :oops: to try in order for us to fully believe and comprehend this wonderment you're describing. :cool: I prefer my cookies of the chocolate chip variety, and not too soft ;)
 
And my quail that were shipped Tuesday are supposed to be delivered by 8pm Friday. Where would they deliver them to at that hour? So Saturday i figure i will have a box of dead quail to pick up. SO MAD AT USPS!:mad::mad::mad:
 
Thank goodness Cap, I thought BYC was doing it to punish me. So haven't complained. I go nuts with the darn 'Like' icon. Have to fool with it several times and each time it puts out an empty line, but I persist until it adds me . Extremely aggravating. It's been happening several times a day, in almost any thread or forum.
