The problem with chicken...

    The jalapeno popper chicken and tauitos sound delicious! Ill have to try those. Keep the recipes coming!

    I'm not sure how open you are to different cultures but you can look up Chinese food and Mexican food recipes, both have a wide variety of recipes that include chicken. Also, most use onion but like others said, u can just leave that out :thumbsup

    I make orange chicken at home (heathier that way) and everyone loves it. And we make many of our traditional Mexican foods if you'd like some ideas I can share :rolleyes:

    Please do! We love chinese and mexican food. Chinese i kinda got to be in the mood for because i had a very bad experience once and was sick for a week. Needless to say, we dont eat at that establishment anymore. But mexican ive never had an issue

    SERVES: 2

    INGREDIENTS
    DIRECTIONS
    1. Heat the olive oil in a medium size skillet, add the garlic and saute for a moment. Season the chicken with salt & pepper and brown in the skillet along with the garlic.
    2. When the chicken is evenly browned on both sides (approximately 8 minutes), add the rest of the ingredients and let it simmer for about 15 minutes.
    3. When all the flavors are combined, serve with Spanish rice & warm tortillas.
    This recipe can also be done with shredded chicken breast, in which case it would be recommended you sautee the tomato, garlic and chili then add the chicken about four minutes later :)
    Sorry it took so long to reply, and there's soo many more depending on your personal prefereces. Some I'd recommend Pollo Encacaguatado (creamy peanut sauce), Tinga (spicy), Ensalada de Pollo. There are like hundreds if you just type in "Mexican recipes with chicken", you can do like a 30-day Mexican-style chicken challenge :lol:

    There's also Parmesan crusted chicken it's super easy to make. U mix mayo, Parmesan cheese and bread crumbs then bake for about 25 mins and viola! I pair it with a garden salad and sauteed mushrooms or mashed potatoes. Even my 3 year old loves this, salad and all! Either google or I can give elaborate if u want to try this one :)

    I think id be really sick of chicken if i did a 30 day challenge lol. I usually cook about 3 or 4 days a week. Just depends on how many leftovers we have. But these are all wonderful ideas. Fried chicken was on sale at the grocery so i cheated on cooking over the weekend:oops:

    So I tried the jalapeno popper chicken. I was very good! I think it can be approved upon though. There was quite a bit of prep. Im thinking next time ill mix the cream cheese, cheese, breading and chicken precooked together and bake until the cheese is melted

    The lutheran sandwiches and turn overs sound interesting. We can do garlic. For whatever reason onions and leek just dont agree with our digestive tract. We are going to try the chicken taquitos for dinner tonight

    Update! Tried the taquitos. Delicious! And so quick because of the crock pot. Defiantly putting this in the rotation. Thanks!
