Please do! We love chinese and mexican food. Chinese i kinda got to be in the mood for because i had a very bad experience once and was sick for a week. Needless to say, we dont eat at that establishment anymore. But mexican ive never had an issueI'm not sure how open you are to different cultures but you can look up Chinese food and Mexican food recipes, both have a wide variety of recipes that include chicken. Also, most use onion but like others said, u can just leave that out

I think id be really sick of chicken if i did a 30 day challenge lol. I usually cook about 3 or 4 days a week. Just depends on how many leftovers we have. But these are all wonderful ideas. Fried chicken was on sale at the grocery so i cheated on cooking over the weekendREADY IN: 35 mins

INGREDIENTS
DIRECTIONS
- 2 boneless skinless chicken breasts
- 2 tomatoes (chopped)
- 1 -2 jalapeno (seeded & chopped)
- 1⁄2 white onion (chopped or diced)
- 2 garlic cloves (chopped)
- 2 teaspoons olive oil (I use grapeseed)
- 2 teaspoons chili powder(optional)
- 2 teaspoons fresh cilantro (finely chopped)
- salt & pepper, to taste (we use Knorr chicken powder instead)
This recipe can also be done with shredded chicken breast, in which case it would be recommended you sautee the tomato, garlic and chili then add the chicken about four minutes later
- Heat the olive oil in a medium size skillet, add the garlic and saute for a moment. Season the chicken with salt & pepper and brown in the skillet along with the garlic.
- When the chicken is evenly browned on both sides (approximately 8 minutes), add the rest of the ingredients and let it simmer for about 15 minutes.
- When all the flavors are combined, serve with Spanish rice & warm tortillas.
Sorry it took so long to reply, and there's soo many more depending on your personal prefereces. Some I'd recommend Pollo Encacaguatado (creamy peanut sauce), Tinga (spicy), Ensalada de Pollo. There are like hundreds if you just type in "Mexican recipes with chicken", you can do like a 30-day Mexican-style chicken challenge![]()
