I didn't know you could freeze eggs! That's a pro-active idea for storing.

I haven't even tried to freeze them yet..
i'm going to do some right now!
 
I'm going to freeze them in an ice cube tray..then once they are frozen put them in a zip lock type freezer bag...
Then tomorrow or the next day I will use some for cooking something...to test out if they "use" ok.

I think it stays better, but also...
Maybe the shell is what makes it unhealthy when left out too long!

Guilty as charged. I'm getting 3-4 dozen everyday. I do as everyone above, sell eggs...give some to our closest friends and relatives. I also feed a ton of eggs back to the girls... I only bring in the clean eggs...the girls get the rest. I'm stalked relentlessly by a posse of 30-40 hens until they see I'm empty handed. My own fan club...:lau
*Disclaimer: I think I'm the only one who feeds raw egg back to the hens. It's not a common practice. I haven't had issues so I continue the practice.

I've read about the freezing in the ice cube tray. You can also dehydrate eggs and use the powder for baking. @ronott1 has an amazing amount of knowledge about dehydrating eggs and such.
 
Well I got here too late. I was going to suggest powdering them. there is quite a bit of info out there for powdering your own eggs. The 2 I know of is pre scrambling and dehydrating raw. I prefer the latter as the prescramblimg method tends to make them taste a little stale. I read that the prescrambling method is no good if you want to use them in recipes later as well because they don't fluff. But dehydrating raw then you can add water and cook them scrambled or use in a recipe. The down side to raw is it just ales a lot longer to dehydrate them. Probably about 8 to 12 hours compared to about 3 or 4 hours if you scramble them first.
