I have yet to find a consistently successful wheat bread flour that doesn't include either regular (or self-rising) flour or gluten powder. Without one or the other, the bread is way too dense and chewy.Check in the Any Home Bakers Here? thread. The first post contains links to almost all the recipes that have been posted in the thread.
I believe that Ron Ott has said that to get whole wheat bread to come out properly that it is necessary to add gluten to the recipe.
