LOL You sound like me. Mine looked in my bator on Sunday, came downstairs and says "ARE THOSE DUCK EGGS UP THERE?!!?" (He's not a big fan of ducks.) He says the quacking wakes him up, although he can sleep through the TV blaring just fine. We are building a new big pasture for them far away from the bedroom window so noise won't be an issue anyway. Anyhow, he said "Please no more buying duck eggs." So...I'm sneaking down to Boondockers to pick up my Ancona ducklings that will "hatch" out of my eggs--because I'm not holding out a lot of hope that many (or any) of my eggs will actually hatch.

I'm just hoping they get ducklings soon enough that hubby doesn't become suspicious of how long those eggs have been incubating.

ATTENTION!!

OPERATION "Little White Lie" is in FULL FORCE.

Hubby: (looking in bator)... "Is this the new chicken?"
Me: "Yes.. (nervous twitching.. get away from the bator.. Oh geez.. he's gonna see.)
Hubby: (puzzled look) "Are those Duck eggs?"
Me: "Yes."
Hubby: "Those are freakin' HUGE!!"
Me: "Mmmm Hmmmm"... (change of subject).

Heres the simple quick version. The longer one is a bit more time consuming.
for 4
Noodles (whatever you like) (about 1.5 c. dry) - cook them, drain
Chicken pieces - chop into chunks and cook while noodles cook.
BACON - yep, cook about 4 slices and crumble them up
Alfredo sauce (or whatever you like - white and creamy is good)
Italian bread crumbs

Cook the noodles Al Dente - then after draining, add chicken and bacon (more if you like), and alfredo sauce. Put into an oven proof pan and sprinkle top with crumbs. Bake at 350 for about 18 minutes, until warm and toasty. Serve.....

You can make alfredo wi/ cream, salt, pepper, and grated parmasian cheese. I use 2 c. cream or half n half. bring to simmer over double boiler, add about 2/3 c. cheese, plus salt and pepper to taste. Just make it first, and let it cool while you do the noodels and meat.

Its super delicous. Also good as duck carbonara or even goose, but I go with chicken or quail 98% of the time.

Don't you use eggs for carbonara? I've never made it, but I need to find me some recipes that use eggs. They are taking over the fridge.

Use the eggs to make noodles, and freeeze them. Do you know how??

! c. flour
1 egg
a dash of milk, if needed.
salt

but flour in bowl, make a well, put inthe egg. mix it till its a ball, adding milk if needed to get it to stick into a soft ball. roll out with floured pen on floured board. Use pizza cutter to cut stirps, chunks, or squares. OR, roll it out, roll it up (like cinn. rolls) and then cut it with a knife. cook then (2-3 minutes if fresh), or dry for several hours, and freeze for later use.

Another easy eggy receipe: quiche
take a pie crust (or make one) put about 1 c. cheese, and bacon or whatever meat you want over the cheese. mix 8 eggs, and a bit of milk and salt and pepper. pour over the cheese/bacon. Put on a cookie sheet (maybe cover w/foil - the cookie sheet) and bake at 300 for 60-70 minutes.

Easy and delicious. change veggies, or meat, or cheese at will. We like reubinn ones, w/corned beef and saurkraut, kids like it with bacon and cheeder. Also good as a florintene, with ham and spinach!

Guess I like to cook to much!
