QuackerJack - your air cells sound good to me. Re. the discolouration - if it looks like you have a grey/purple-ish 'bruise' developing on the egg that probably means it's no good. If you are sure about the discolouration I'd be inclined to take it out and candle to check for movement. Re. the humidity - no, there is no way I know of to tell if the egg is getting too much moisture on the inside. I'd just leave your humidity at about 70%.

Stillmecle....same as above - if you think they are turning a darker colour in patches and have seen no movement for some time then I'd take them out and candle. I think the benefit of taking out bad eggs outweighs the downside of opening the incubator. Your other eggs sound like they are going well and will be able to handle it. If your incubator struggles to get the humidity up again try steaming up the room a bit by hanging some wet towels around (or running a hot shower if your bathroom is nearby).

Remember - I am pretty much a newby to this too so just saying what I'd do
