Good point. Also they could have lost too much moisture due to refrigeration. Ideal storage is 60% humidity.
The TJ in my city doesn't even carry fertile eggs and they didn't know what I was talking about.
I went to Whole Foods and they had them. The Julian date indicated they were almost 2 weeks from the pack date. They come from a farm in Wisconsin, then got shipped to the distribution center in Chicago and then shipped to St. Louis.
I did try a dozen but none developed.
Apparently I have very little chance to try hatching fresh store eggs.
Maybe I'll have to start supplying local, organic, pastured, fertile, super dark eggs. Those people would go wild over them.
How much should I charge in these upscale neighborhoods?
I would probably not even be able to keep up with demand in the spring.
