Turkey roll soup low fat version of cabage roll

    I love cabbage rolls but they are so unhealthy! So I foudn this great version of soup thats tastes like cabbage rolls but uses ground turkey.

    2 rolls of ground turkey approx 2lbs
    2-3 carrots cut into rounds
    1 head of cabbage, thinly sliced ( I slice it down the middle and make long strips that my kids think are noodles)
    1 small onion chopped
    1 clove of garlic or a sprinkle of garlic powder
    salt to taste
    pepper to taste
    1 large can tomato juice
    1 can chopped stewed tomatoes

    I cook the turkey in a saucepan and drain off all the liquid. Then I rinse it in cool water. Mean while I bring the can tomato juice plus 1 cup water to a boil, and add the veggies so they get tender. Then I add in the turkey and bring it down to a low simmer. Its ready to serve when the veggies are tender. Some folks prefer the cabbage be tender-crsip so if you do add it last.

    sounds way yummy! i make a cabbage roll casserole that is similar and my kids LOVE it! so we'll have to try your soup! a little shaking it up is good.
