Turkey Sausage in the making

We just made 60 lbs of Korv and sweet italian 3 weeks ago and have enough meat left over to make more, gonna wait till Jan. Looks good. We have a commercial machine my parents got us for christmas 2 years ago and love it. We ran out of casings and it was a Sunday so I also have 20lbs of meatballs in the freezer.

I know what you are talking about so as I got lazy (and made more money) I bought one of the big LEM grinder/stuffer with the foot pedal on/off switch. It makes it a 1 man job but the kids still love to help. I also have one for the KitchenAid mixer but it would bog down when we would gring a bunch of deer.
 
I have thought about that from time to time. I even have a DC motor and controler in the barn, all I need to do is put a pulley on the grinder. I kind of like doing thing the old way I guess, we had 5 days off for Thanksgiving so it was a relaxing project for us.

Our electric grinder also has the stuffer piece on it but we've only make ground deer sausage and chicken sausage before so we have never used the stuffer, we bought a back of casings and seasoning one time but we werent brave enough to use the casings, they looked pretty gross. If I did try it I would want to get fresh ones from a meat store instead of something package like those were for who knows how long.
