This will give some great health benefits. Also keep an eye on the whole grains. They, too, are highly processed and can contain MORE carbohydrates (sugars) than white breads. Just remember that 50g of carbs regardless of the source = 1/4 cup of pure sugar.

Be sure you are including healthy natural fats in the mix. One of my favorite vegetarian dishes is this quick little salad...

I can honestly say that I have not had one single "sweet tooth" craving this time. It seems impossible, but there it is. Sugar craves sugar, so every time you eat it, you want more of it.

I don't like aspartame or Splenda or any of that stuff, but I do like and use stevia. It doesn't taste artificial at all to me, maybe because it isn't.

Not saying any of this is what you should do, but just sharing an observation from one sweet-tooth to another.

Oh, wifezilla--I am going to try that fudge recipe, with stevia extract. Too bad it can't be pure chocolate instead of with peanut butter, but I guess the PB gives it the texture it needs. I even have all the ingredients on hand!

Chick peas (Garbonzo beans) are awesome but I've never tried Hummis.

Tofu and other soy products do nothing for me either. There is actually
good evidence that soy is bad for you. I have no position on that other
than Blahhhhh.

It's been 2 years without that stuff for me. It's nice not having to worry about having a stroke at any minute due to high blood pressure

I have, quite frankly, been astonished at how easy it's been. I really expected to feel deprived, but I think that going cold turkey, rather than just partially cutting sugar, is what made the difference. I still have a vivid sense memory of how delicious a, say, fresh Krispy Kreme donut is, but not so much that I'd have to eat one if it were in front of me.
 
I just cooked a completely vegatarian dinner for 7 I will give you those recipes...my baked pears, spring rolls and coconut rice (a friend's recipe).


Coconut Rice

4 Cups of Basmatic Rice cook and set aside
1 Can organic lite coconut milk
1 Cup of Water
1 Cup of Sugar

Put a coconut milk, water and sugar in large pot (large enough to hold 5 cups of rice) Heat over medium heat, stirring ocassionally until it reaches a boil. Add rice and cook on medium heat for abut 8 - 10 minutes until all liquid is absorbed.

It is delicious!


Spring Rolls

Spring Roll Rice paper wrapper
2 Cups Shredded Cabbage
1 Cup shredded carrot
6 mushrooms chopped
2 Tbls soy sauce
3 Tbls sesame oil
2 teaspoons of ground giner root or 6 paper thin slices of fresh ginger root

Heat oil and soy sauce in a wok over med - medhigh heat, add veggies and stir fry until tender.

Take a deep fry pan and add warm not hot water. Submerge you wrapper in this water 2 or 3 at a time until soft, about 15 seconds.

Pullwrappers out one at a time and lay flat. Place 1 - 2 tsp of veggie filling just above center of wrapper. Wrap bottom over veggies, wrap each side of wrapper towards middle over veggies and roll until you reach the end of wrapper. If it does not stick together you can make a glue out of cornstarch and water.

they can be eaten as is or deep fry them or bake them. I bake mine in a shallow dish until lightly browned (about 20 minutes at 350)

Baked Pears

8 pears
1 Cup of sugar
2 Cups of apple juice or your favorite wine
1 Cup of water
2 tsp of ground cinnamon or cinnamon stick pieces 2 " long approx 6 pieces
1/2 tsp of nutmeg
1/4 tsp ground cloves

Preheat oven to 350 degrees

lightly grease with butter a glass baking dish and set aside

Prepare your pears by slicing them in half and removing the core. Place them face down in the baking dish.

In a saucepan, mix apple juice/wine, water, sugar and spices. Heat, stirring over medium heat, until mixture reaches a boil and sugar has dissolved.

Pour mixture over pears in baking dish. Cover baking dish with aluminum foil (prick a couple times with a fork to vent) and bake until pears are tender, about 15 minutes. ( I actually bake them for about 30 minutes and they are delicious. ) You can serve these warm, with ice cream or even cold. Just refrigerate the baking dish for 2 hours covered if you want them cold.
