We use gluten free bread. My 2 favorite GF breads are Rudi's in the blue wrapper (corn free), and Whole Foods brand "Light White sandwich bread". (corn free).
If you are avoiding carbs/starch, you can use the Julian's "paleo" bread, made from either almond meal or coconut flour, but I think it tastes nasty and it's $9 for this little loaf that is about the side of a brick. They make it with egg whites- no yolks, so it's pretty flavorless and more like cardboard, IMHO. Maybe if it was soaked in butter, fried with melted cheese and bacon inside it would taste good? (or not?)
Tonight we had taco salad for dinner. We used a scant few "Beanito" chips (rice/bean) crunched up on bottom, then chopped cabbage (adds more crunch, plus it's alkalizing), spinach (instead of iceberg, which has no nutritional value), grassfed burger with pinto beans for the meat, Daiya cheese, and all the usual stuff- olives, tomatoes, green onions, fresh cilantro, salsa. Since we're dairy free, we use Karam's garlic sauce instead of ranch or sour cream. I make it homemade some days - (AKA Lebanese garlic Sauce). Best taco Salad ever- really!
