Washingtonians Come Together! Washington Peeps

It's been a busy morning. I chopped up cucumbers, onions, jalapeno and Hatch peppers for relish, four quarts worth.

With 7 cups cucumber and one cup jalapenos I made dill relish, and have 7 half pint jars processing in boiling water right now. After I take those out I'll start making sweet relish, which will probably be another 7 half pints. That should be plenty for the next year.

Never got around to picking beans.

Got 7 loud pops when the lids sealed.

You must have a well stocked pantry and freezer! Lucky you.

I guess you would say it's not luck at all. 😁
 
The pantry has a way to go. Things will get busier when the tomatoes start producing. I've picked only three so far, and I probably need 100 pounds of tomatoes for my salsa, tomato sauce and canned tomatoes.

Now that I have all the relish I need I guess the rest of the cukes will become dill pickles. Those are basically zero calories so I can eat all I want. LOL

Sweet relish is finished. Got 8 half pints and a taste. And the kitchen is all cleaned up, which doing is the worst part.

Of all things cancelled Richards cell we all three had the same phones.
called tech they said sim put a pin in it.
I used some wire from welding the hardware cloth sim comes out easy.
My screen was broke something awful his was not.

100 pounds of tomatoes??? That is a lot of canning!!

But then, I use 30 lbs just for marinara and you make salsa and canned tomatoes, etc. I guess it makes sense. I still buy canned tomatoes and pico de gallo, although I could make the latter fresh each week.

Mine too! It's satisfying. Those pops came from Walmart Mainstays lids. I used brand new Ball lids on the second batch and not one of them popped, but they all sealed tightly so no problem. The Ball lids just don't have the dimple that causes the pop sound.
 
I'm halfway done picking green beans. Now I need to get on the ladder and pick the rest from the outside of the garden fence. I got 3 pounds so far. There was also one pullet egg, but didn't get one at all yesterday.

I decided that I'm going to use my pressure canner for the first time to process the beans. My freezer is close to full already so I need to start canning more stuff instead of freezing.

I ordered Superb lids a while back and they really bang into place! I guess I don’t get out much. :gig

I thought you had a water bath canner. That would be better, and maybe not make the beans mushy. They get so soft under pressure.
