I remember tuna noodle casserole, but for the life of me have never figured out how to make it. Also, we used to have a salmon loaf that I loved. We eat salmon now, but have not ever tried to make a loaf out of it. I bought salmon cakes once and hated them, so maybe my tastes have changed.

Mom did bechamel sauce with cheese and tuna added in. Then mixed that with the noodles and veggies.

Hubby doesn't care much for it so I haven't made it in years.

If I do, I'll share it. All of the ones I have seen used canned salmon, which I'm quite certain my mother used too. That doesn't appeal to me anymore. I might make one if it used fresh salmon.

I wonder if it would be similar to crab cakes. I have a fabulous recipe for those. I suppose you would just substitute salmon for the crab, but I would think it would have to be cooked salmon. So perhaps I could try this with leftover salmon. lol Like there is ever any of that.

I'm a sucker for tuna noodle casserole, I make it with celery, mushrooms and peas - mostly milk based with very little cheese. And turkey tetrazzini. And homemade "hamburger helper." If it's a creamy casserole, I'm all for it! Probably because I DIDN'T grow up with casseroles I have a very romanticized notion of eating them.

I like casseroles too. I don't make many of them, but that's only because most of them are too high calorie for me. I am making an Alfredo dish tomorrow that has chicken, broccoli and zucchini in it, so that is sort of a casserole. I probably won't have any. I tend to eat a lot of salad for dinner. My more substantial meal is in the late morning. Then always an egg of some sort.

Not 100% sure, but I think my mom's tuna casserole included a bag or two of dry egg noodles, two cans of tuna and a can each of cream of mushroom and cheese soup.

I was a little late for my PT appointment today. Neighbor came over to visit and I lost track of time.

Made some chicken broth yesterday. Only got 3 quarts out of it. I guess roasting a whole chicken will have to be on my regular rotation of meals. Homemade just tastes better.

No, I don't roast my own chickens. The princess dinosaurs get to die a natural death, generally of old age.
