I actually don't know on your regulations though. I'd suggest a couple hens are okay, but it depends how far in the city you are. If you're out to, say, the "West Side" or Fairmount area - You're fine!

If you're looking to get chickens, the Co-Op in Sequim has some brown layer chicks for sale on March 27th, and we've got some chicks available the 10th of April I believe. Ours, however, will be pale blue, white, brown, pink, and green egg layers. And come summer we'll have just about everything you can want or imagine.

My only 2 chickens, at the time, are a sebright hen and my EE(?) rooster. My hen just layed an egg in a bucket that had a little hay in it. I thought it might be fun to see if anything would hatch out, but I would like to get a few more eggs first. Should I remove the egg (and then what do I do with it?) or leave it there until there are 3 or 4 of them? Thanks, for any help on this.

Hey! Does anyone know of a cookbook using duck eggs? I've never cooked with them and I don't want to screw them up or the fam might change their minds on letting me get them!!! (I'm still getting some!) If I can EVER find any!

I've googled "cooking with duck eggs" and didn't get any good results!

HMMMM! Do us duck lovers need to write one ourselves!??

Just substitute them for chicken eggs, keep in mind that they're a lot bigger though, so if a recipe calls for 4 chicken eggs, I usually only use 3 duck. I've found that even if I used 4, it doesn't mess it up at all. I would only be worried about recipes that call for a "half cup" of egg whites, or whatever.

Duck eggs are much larger than chicken eggs. The yolks are thicker too, so they can get rubbery if overcooked. Chocolate chick had some duck eggs (with bright orange yolks) cooked over-easy in Scotland, and proclaims them the best eggs she’s ever eaten.

They’re also rich and wonderful for baking, and they make custards turn out silky smooth.

Except for being somewhat richer in flavor than chicken eggs, duck eggs can be used just like chicken eggs in whatever you like. A small amount of pork with sesame oil, garlic, chopped green onion, soy sauce and ginger tastes great when deposited (about a teaspoon full) atop a few tablespoons of lightly beaten duck egg in a small amount of oil. Place the pork mixture to one side of the egg layer, fold the other side over the filling (omelette fashion) until the egg is set then finish cooking on a very lightly oiled skillet in the oven or on stove top on low heat. Serve with Tobascco if desired.

I thought chow.com would have more but not. Sorry. You'll do great sounds like you just have to be careful not to overcook them....

Just remember less is more... I'd just hard boil them find some fancy salt and try it that way.

Just found this: looks like the whites don't whip up like hen eggs do... so don't do a souffle. I have some great quiche recipes that knock everyone's socks off all the time... you could also go that route.

thanks everyone! the chicks arrived this afternoon!

they're all alive and well (i think). they're eating and drinking and everything seems good. i'll still be worried about them for the next few days tho. one of them just sat down and closed her eyes. i assume she's tired and sleeping but i'm still worried that she won't wake up! is this normal behavior (for the chick and me)?

provide for fair and uniform determination of penalties for civil
infractions issued under RCW 16.36.116.
