We Quit Cigarettes

The vacuum seal machine I prefer. If it was a larger bird like a turkey then I'd do the shrink bags. I use this vacuum seal machine for a lot of things. It's so easy and convenient.
I got the biggest size shrink bags I could find. They were small for a year-old heritage tom. They'll no doubt work well for a younger one. The vacuum bags are great for anything that'll fit in them, but even the accordion ones were too small for my red broilers. For anything that will fit, if you have a vacuum sealer, I think that's probably the best option.
 
I haven't raised quail yet, but from what others have written, quail seem to be much easier to process than chickens. IMO, meat-birds like CX and red broilers are a lot easier than layer/heritage roosters. So are turkeys. It's hard for me to get my hand into the smaller body cavities of the layer cocks. I'm not sure how I'd manage processing quail. Maybe all you need to get in there is a couple of fingers. Or one could spatchcock first; empty out second, I suppose.

The thing about quail is that most folks seem to keep quail in cages. Not all the keepers here, but no one free ranges quail or keeps them in a coop and yard. I've seen a few vids of people keeping them in tractors, and of course those here who build aviaries for them. Seems like a lot of infrastructure to me, just to try them out, but I'm not sure whether I'd like keeping them in cages. I dunno. I can't seem to make up my mind about it.
Takes just a couple of quick minutes to butcher a quail.
I can do it pretty quickly now.
I just need to get the killing part down and then I can step my hatching game up.
