went from no eggs to can't keep up

Make pasta! It takes 3 eggs and 2 cups of flour and a little olive oil and you've got 1 pound of the best pasta you'll ever eat. I make a pound at a time and freeze it. Cooks in just minutes right out of the freezer. Sometimes I make ravioli with it. Yum!
Also, I found out my local farm supply store will buy our eggs. They wash them and sell them in their store.

that's a great idea that I've never thought of! So when you say you make a pound of it and freeze it are you talking about just the hunk of dough or when it's all cut with the pasta maker? I've got a cheap one but it works just fine for me.

You need to roll out the dough and cut the pasta, then freeze it. It's just me I'm feeding so a pound of pasta is 8 servings for me. I freeze 2 servings together. When I cook I usually make two servings: one for dinner and one for lunch the following day. If you have a large family you can easily use up a lot of eggs. Also, once you make your own pasta, you may never buy store bought pasta again. It's really that good.

thanks! my girls are laying really good and that sounds like a great idea. I could roll it out, make raviolis and cut it with a pizza cutter and freeze too?
 
Every spring i get burried in eggs.
I sell some, the freshest. i have 2 food pantries that i donate to every year. One even picks them up at my home.
If i feel some eggs are just to old to even donate, i bake an angel food cake with the egg whites and make a dish of custard with the yolks. My family loves it!
