What am I cooking tonight?

I went a little nuts this evening- Green Chile Chicken Enchiladas.
Made and canned the salsa verde last June, when tomatillos were cheap. I don't remember putting that many hot peppers in it though! It was HOT.

DH is off this weekend, so he'll get eggs, cheese and bacon breakfast tacos tomorrow, using more tortillas. I'll make chips from the rest.

NOT a low-fat meal, but ...............

I made the Chicken Parmesan, well I was out of Parmesan but had Monterey Jack . I put MJ on top and let it melt, it was good!
