What are you baking now?

I actually did add a bit of water right before the first rise. Then kneaded it for like 5 min and rolled it out to shape. But have to add flour so it is not sticking to everything. Then let second rise and baked it. Each rise I did at least 25 min. This is gump bread I made last night. The logs look like baguettes kinda maybe a touch bigger.

Don't add any flour back in. Once you have it well mixed cover it and let it rest for about ten minutes before begin to knead. It's going to be sticky at first but keep working with it. Eventually it should become less so.

If you're hand kneading you need to do so for at least ten minutes.

I will try that but last nights was really sticky because I added the water because it was too dry.

I will knead longer next time. I do use heat to try and get it to rise and it does rise but not better and very little either way.

5 min by hand? That's not enough I don't think.

Is your yeast foaming properly?

Yes it is a new jar of yeast too.

Then I'd say it's your kneading. I'd also give the raise/proof five more minutes each time - while 20 is enough for gump, the extra five won't hurt it none.

I want to bake something but I don't know what. My husband hasn't properly cleaned the kitchen in 3 days so I don't think I should reward his lack of effort with baked goods - especially if it's going to make MORE dishes. But I want to bake something!!! Not bread. Like a tea cake or a friand or something. Hm.

I made some banana blueberry bread and some oreo's....yum yum....of course, the kids dug into the oreo's and this is what's left!! My daughter also took some crescent rolls and put some pizza sauce along with pepperoni and mozarella cheese on them, covered with another crescent piece and baked...those are gone. We made lasagna noodles, but here is what we baked minus the mini pizzas...

YAY teaching your kids to cook and making homemade Oreos!! It's like teaching them to be self-sufficient AND that they can be frugal and have healthier versions of their favourite treats. So much learning in one day!!!!
