What are you baking now?

Ok.. well I'll try & post them all.
Sweet Roll Dough (p. 215 Betty Crocker Cookbook (c)1978)

1pk active dry yeast,
1/2 cup warm water,
1/2 cup warm milk (scalded then cooled)
1/3 cup sugar,
1/3 cup shortening butter or margarine,
1 tsp salt,
1 egg,
3 1/2 to 4 cups flour

Dissolve yeast in water, stir in milk, sugar, shortening, salt, egg & 2 cups of flour. Beat until smooth. Add more flour to make dough workable.
Turn dough on lightly floured surface, knead until smooth & elastic. Place in greased bowl, turn greased side up. Cover & rise until double. Punch & rise again.

Divide dough into 2. Roll each into 8" squares (floured surface) and cut 1" strips (I use a pizza cutter). Then weave 8 strips into a square pan. there is enough to do two 8" square pans, but I did one square and a few braids.. so took strips & braided them. Cover with margarine/butter (spread it on) and then COVER with cinnamon sugar mix. Let rise till doubled and bake until golden brown @ 375

Cinnamon Sugar - 2 tsp cinnamon & 1/2 cup sugar, blend well.

Pineapple Upside down cake
Well you can buy a mix for it, or make a basic yellow cake but use the juice from the pineapple can to enhance the mix instead of water.
1 Cake Mix
1 can of pineapple slices
1 cup dark brown sugar packed
1/4 cup of butter
can of cherries optional

Melt butter in bottom of cake pan (I used bundt) cover with brown sugar evenly. Place pineapple rings over brown sugar, one cherry in the middle of the pineapple ring. Make your mix, pour it over the top.. bake 350 for about 40 minutes, till cake is done. Cool 5 minutes on the counter, then FLIP onto plate that can take the heat. Beautiful and YUMMY!!!

my bundt pan is a little small so I had some extra cake mix and made 4 singles (in the small desert jar)

Powdered Donuts for the chickens...
1lb of Protein/Molt Mix (which I make here at home)
1 box of Knox Gelatine
1/4 cup of honey

Combine grain/seed mix with honey set aside.
Dissolve gelatine in warm water over low heat.
Add sweetened grain/seed mix and throughly coat.
Dust 4 round serving dishes (3-4" diameter) with DE and add grain/seed mix (about 4 oz seed each container)
Press a permanent marker or other into the center of each dish to create a hole in the middle.
Press mixture flat & tight, really pack it down.
Cool in fridge about 1 hour. Slide marker out, dump out the "donut" and then sprinkle with DE again on the top.
Hang through hole in the center and watch the chickens enjoy.

Hi There !!!!
I made an Egg Nog Cheesecake night before last....it was really good! It was super simple too !

Crust:
2 cups vanilla wafer crumbs
6 tablespoons butter
1/2 teaspoon nutmeg

Mix crumbs, butter and nutmeg and press onto bottom and 1 1/2 inches up 9 - inch springform pan ( I just used a glass pie plate and it worked ok )

Filling:
4 - 8oz packages cream cheese softened
1 cup sugar
3 tablespoons all- purpose flour
3 tablespoons rum ( I used 2 tablespoons milk and 1 tablespoon rum flavoring )
1 teaspoon vanilla
2 EGGS : )
1 cup whipping cream
4 EGG YOLKS : )

Beat cream cheese, sugar, flour, rum, and vanilla at medium speed untill well blended. Add whole eggs one at a time, mixing at LOW speed after each addition, JUST untill blended. Blend in cream and egg yolks.
Pour into crust and bake 1 hour and 15 minutes . (give or take 5 minutes or so..mine took about 1 hour 20 minutes but that might have been the pan I used)
Run knife or metal spatula around rim to loosen cake: cool before removing rim.
Refrigerate for at least 4 hours.
Let me know if you like it! My husband loved it!

Tonight I made caramels w/ pistachios instead of cashews (like them both but had left over pistachios from last night). Last night I made almond/coconut brittle and pistachio brittle. They all came out super yummy!
