What are you baking now?

My cousin posted a recipe for Zucchini Cupcakes that uses Orange Juice and Almond Extract that I gave a shot yesterday. They came out of the oven just before lunch and by bed time there were just 3 left... Granted I have a teenage boy in the house, but it is rare that a batch of anything goes that fast unless he has friends over! I just saw this recipe, and thought I would share it. I haven't made it yet, but since it called for 10 eggs, I was thinking that this was the place to post it. It sure looks good!

Caramel Apple Strata

Just made an oatmeal apple bar. It melts in your mouth.

1 1/2 cups flour
1 1/2 cups oatmeal
3/4 cup shortening
1/2 tsp salt
1 tsp baking soda, rounded
3/4 cup brown sugar

Mix together well. Put half in a 9 x 13 pan. Spread applesauce or apple butter or fresh slices apples (or any other fruit you want) over then cover with remaining oatmeal mix. Bake at 350 for 40 mins.

And morning sunrise muffins (has carrots, apples, coconut, raisins in them, they smell delicious) from the Taste of Home fall baking.
