What are you baking now?

Last weekend, I was given a LARGE cucuzza squash. DH hates cooked squash, so I had to come up with something new. Thought about Zucchini Bread. Looked up recipes and they all seemed pretty alike so I used this one: http://allrecipes.com/Recipe/Moms-Zucchini-Bread/Detail.aspx

Talk about delicious!! I think I have enough squash left to make 2 more batches, so that's today's job.
That's my go-to zucchini bread recipe. I wind up tweaking it with add-ins for different flavors, but the basic recipe stays the same. But, I usually add half again as much zucchini in the summer when it's abundant.

Donrae, good to know I can add more zucchini if I have to. The only modification I made to the recipe is that it calls for 3 teaspoons cinnamon. I used 2 teaspoons of cinnamon & 1 teaspoon of fresh nutmeg. I just love fresh ground nutmeg! And I have a handy little nutmeg grinder like this one http://www.amazon.com/Norpro-775-Sp...qid=1411211904&sr=8-8&keywords=nutmeg+grinder It works so good! Although I got mine at a Tuesday Morning & only paid $1 for it.No more scrapped knuckles.

I was also thinking of adding some golden raisins or some cransins.

I made 4 more loaves yesterday. Those ale all destined for the freezer. We've a;ready eaten the first 2 loaves!
 
I am going to bake some blue berry muffins!

I add the zest of one lemon to the dry ingredients.

Blueberry Muffin Recipe

  • 2 ½ cups Flour (Heaping)
  • 1 ½ teaspoons Baking powder
  • 1/2 teaspoon Soda
  • 3/4 cup Sugar
  • 1/2 teaspoon Salt
  • 2 eggs, beaten
  • Zest of a lemon
  • 1 cup Buttermilk
  • 4 ounces Butter , melted
  • 1 ½ cups Blueberries, fresh or frozen(10° frozen)
Sift dry ingredients together in a large bowl. In another bowl, whisk eggs, lemon zest, buttermilk and butter that has been melted and browned slightly. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.
Fold in blueberries. Spoon batter into greased muffin cups and bake until golden brown. Bake at 400 F for 20 -30 minutes.
Makes 24 blueberry muffins.

I usually drop back the cinnamon a touch and add a handful of chocolate chips, that's my family's favorite. I've also used orange extract and added nutmeg, cloves and allspice, and used lemon juice and blueberries. I love raisins and walnuts, my family not so much so I don't make it that way too often.

I made this recipe, but I didn't want to do muffins, so I put it in a loaf pan and made bread out of it instead. It's delicious!

I just kind of put all of the ingredients together without measuring but I'll try to explain it

Ingredients:
Self-rising flour
1 fresh egg
sugar. lots of sugar.
8 oz block cream cheese
vanilla extract
Real maple syrup
cinnamon
butter
2 large apples

Batter:
Mix egg (beaten), 1 cup flour (give or take a little), 1 cup sugar (same), a softened stick of butter, and 5 oz of cream cheese (softened). Add 1 tsp of vanilla and maple syrup as desired. I suggest using an electric mixer for this. The batter will be thick and doughy

Apple mixture: peel apples, dice about 1cm by 1cm, mix with 1/2 cup of sugar, cinnamon as desired. (I use a lot of cinnamon)
mix thoroughly with batter.

Glaze: use remaining 3 oz cream cheese (softened), 1/2 stick butter (softened) and 3/4 cup sugar. Mix with mixer, heat in the microwave for 30 seconds (yeah, I'm lazy) stir again.
*Remember to grease and powder your dish for easy cake removal* (coat dish in shortening, dust thin layer of flower over the shortening)
pour the batter evenly into the dish, bake at 375 for around 30-40 minutes. When in doubt, do the fork test.

VERY IMPORTANT allow the cake to cool and separate from the sides of the dish before you remove it. If you try to flip the cake out while hot, it will fall apart.
When cool, flip cake out on a pan, or plate, or whatever. It doesn't really matter what it's flipped on.
Apply your glaze on the cake.
Serve in small slices. It is a very dense cake and you will regret eating a large piece at once! lol

It was quite good. Of course, I had to bake it a lot longer than muffins, but I liked the less oil than my zucchini bread recipe. It made me think about trying my zucchini bread recipe with 1/2 the oil and see how it comes out. I have a bunch more zucchini, so I'll be able to play with it.
