English muffin bread
2 cups milk
1/2 cup water
2 TBSP cornmeal
6 cups bread flour
2 packs active dry yeast
1 TBSP sugar
2 tsp salt
1/4 tsp baking soda
1. Warm the milk and water in a saucepan until very warm (125 degrees) Lightly grease two 8 by 4 loaf pans and sprinkle with 1 TBSP cornmeal per pan.
2. In a large bowl mix together 3 cups flour, yeast, sugar, salt, and soda. Stir milk into flour mixture, beat well. Stir in remaining flour 1 cup at a time, until a stiff dough is formed. Spoon batter in prepared pans (yeah right! It is super stiff, I put it on a floured board and cut in in half and molded into 2 loaves.) Cover and let rise in a warm place until nearly doubled, about 45 minutes.
3. Bake in 400 degree preheated oven about 25 minutes until golden brown. Remove from pans immediately and cool.
