First off, these are not soft like whoopie pies...they actually make a thin hard cookie.
Homemade Oreo's
For the wafers-
1 1/4 c. all purpose flour
1/2 c. unsweetened cocoa
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 c. sugar
1/2 c. plus 2 tbsp room temp. unsalted butter
1 large egg
For the filling-
1/4 c. room temp unsalted butter
1/4 c. vegetable shortening
2 c. sifted confectioners sugar
2 tsp. vanilla extract
1. Preheat oven to 375*.
2. Thoroughly mix the flour, cocoa, baking soda and powder, salt and sugar. While mixing add the butter then the egg. Continue processing or mixing until dough comes together in a mass. If it seems crumbly you can sprinkle a little water in to make it hold together better. On parchment paper, roll out to desired thinness. (They won't rise much) and use a glass (I use a champagne glass) to cut desired size cookies. Place these on parchment paper on a cookie sheet and bake 8 minutes.
3. To make the cream, mix the butter and shortening on low speed and gradually beat in the sugar and vanilla. Beat on high for 2-3 minutes until light and fluffy. Put cream into a pastry bag (I use a ziploc).
4. Squeeze out cream onto one cookie and smoosh another on top. Letting the cookies sit out overnight allows the cream to harden a little but it (the cream) most definitely will not be as hard as the store bought oreo's.
