What are you canning now?

Here are all 3 of my doggies, From left to right: Zeva, Sammy, Bo. Sammy & Bo are the ones I cook for, although Zeva does all cleanup of any leftovers. Zeva was my Mom's dog & when she passed, we got her. I was really concerned about how she would interact with the small dogs. She's a pitt bull and can be aggressive with other dogs. Now, the little ones bully her!! They can even take treats from her & she just sits there with a sad look on her face that says "Did you see what he did to me??" Bo is the oldest, and now he's deaf, blind, few teeth & heart problems. But he's still a lively thing. His nose works just fine - no matter where he is in the house, when he smells me preparing his meal, he heads for the kitchen.

I am sitting here trying to get my courage up to clean the jalapenos for this years cowboy candy. Last year I swore I would never do it again.

I am using five layers of gloves this year.
If I am crying tomorrow, you all will know why.
 
Oh, with the pineapple, are you cooking it first? Pineapple has an enzyme in it that breaks down the protein in the pectin, that is why it is more difficult to set. if you cook it first, then add the pectin it might be easier. Denature the enzyme with heat. That is why you can put canned pineapple in jello.
Papaya, and pineapple..and kiwi and something else that is slipping my mind.

I'm using frozen pineapple chunks that I get from a restaurant supply store. I really don't know if they're precooked or not. But I'll give precooking a try the next time I make some. How long would you suggest I cook them?
 
I have no idea on that. I just remember it being made a point of in a botany class. I can do some searches

I have talked myself out of preparing the peppers today. My son's awards ceremony is tonight and I do not want people to think the tears are just me being overly emotional.
(I talked myself of that quickly didn't I?)

It's ok to get teary eyed when your kids do well (but that is a heck of a good excuse to get out of the peppers).
 
Well, no one likes to hear it, but everyone likes to do it (sometimes). Cleaning peppers qualifies as whine-worthy!
 
We always take him out for dinner at his favorite place after he gets his awards- he was so excited this year because these were all AP classes, and honors classes, so the odds of him getting anything this year was slim.

Anyway, mom moaning about,"It BURNS! It hurts, you all will never get these again, this is the last time, I mean it this year! Last time!"

That wouldn't have been cool. I'd get my 'cool mom' award taken away.
(I don't have a cool mom award, but I plan on making myself one.
