What are you canning now?

That is Vadalia onion. I thought it would be good on ham and cheese sandwiches.
I won't put it in the cupboard though, It will have to do it's aging in the refrigerator.
Root crops make me nervous. I worry that the acid might not be high enough, and this recipe does not call for any salt.
 
That sounds like it would be very good on ham & cheese. Vadalia onions are good on just about anything.
 
I did do a balsamic vinegar and vadalia onion jelly one year. it got eaten up very quickly.
It was wonderful on roast beef sandwiches.
I had forgotten about it.

My eyes are still squinty from the peppers and vinegar.
I am baking some jalapeno poppers right now, maybe that's where the burning sensation is coming from.

I sis going to be an excellent year for peppers at our place, so I better get my tolerance up.
 
Our peppers are just now starting to show up on the plants, guess we got a later start this year. We'll have Poblano and Serrano peppers for hot ones; Bell and Banana for mild.

Love me some pepper poppers! Are you making them with the artichoke like I think you mentioned once?
 
I did not have jalapeno last year, so I made the cowboy candy with Serrano.
My hands were on fire for for days.

My poor husband made like three trips to the store for the canned peppers... by the time I decided I needed artichoke hearts i felt too badly about it to ask him to make another trip.
My son and I brainstormed over some other recipes on line and figured out about what the guy did, My son is disappointed. he says we are missing some very important ingredients

artichokes and Parmesan cheese.
There are more peppers on the bush.
 
Yep, once the peppers start coming in, they just keep coming. You'll get another shot at them I'm sure (but bet the ones you made today were good too).
 
9 pints of dill pickles and 12 pints of bread and butter pickles are done. I cannot wait until the banana peppers are ready to pick.
I have so many more cucumbers to pick that I see another 12 pints of pickles in the future!

Jalapeno poppers sound delicious! I forgot how they burn your hand bad if you don't wear gloves.
We had some jalapenos given to us a few times and I forgot to blanch them once before stuffing them with a filling and baking them. Oh.....my.....goodness!! No one could eat them

Picked purple hull field peas yesterday & canned 7 quarts.

My peppers are doing great in the garden this year. I have jalapenos, habaneros, Carolina reapers, naglah red, and a few others. I love those hot peppers! Since I have so much trouble growing bell peppers, I'm trying Gypsy peppers this year & they are delicious!! The Carolina Reapers are going into a Raspberry/Pepper Jelly this week & it will be HOT!!

I have a huge old Carolina reaper.. never ate it because I fear it. It is a handsome plant, so we just keep it trimmed back and it is like a small tree now.
I cleaned my jalapeno too well. No heat at all.
I wish there was a litmus type paper for heat. I have a tolerance level much lower than yours, but much higher than my mother in laws.
 
@jomoncon , your pepper plants are beautiful! Our Poblano's are starting to grow, looking forward to chili rellenos! (Not to can, just for dinner!)
