What are you canning now?

Is it best to keep vegetables at room temp or refrigerate them if you can't can them right away? I have about 10 pounds of cucumbers and I won't have time to can them until this weekend. I just picked them from the garden and can't decide if it would be best to leave them out on the counter or refrigerate them.

I'm subscribing to this thread! I just invested in an All American Pressure Canner and want to do a lot of canning this year. I have done some water bath canning last year successfully but want to get more involved with pressure canning soups / vegetables etc. All I have water bath canned so far is bread & butter pickles / strawberry preserves / zucchini relish / salsa. The rhubarb is growing strong, so in an attempt to use it, I am going to try making some Sunshine Rhubarb Juice Concentrate. According to the Ball Book of Canning, you add it to white soda, tonic water or ginger ale to make a refreshing drink. My sister thinks it may be good with alcohol also. Never know if I like it unless I try it.

I got my peppers pickled.
No pain this year. I had four layers of gloves on. I would peal one layer off and toss it away.
(The house can make your eyes water a little.)
I used a vadalia onion and simmered it in the leftover juice for six minutes. I will keep it in the refrigerator and use it in the next few weeks for sandwiches.

Nice! Is the lighter colored jar in the 1st picture made with banana peppers?
