What are you canning now?

Not canning, per se....

The last of the apples that didn't end up going to the Harvest Festival or getting made into sauce met the press today. Now have close to 3 gallons of resultant cider waiting in the fermenter for the champagne yeast (to be added tomorrow after the campden tablets take out the bacti nasties and wild yeasties that also like juice)
 
It happens. A number of years back while on our annual trip to Wyoming to hunt we had about half a dozen does, their fawns, and a couple of bucks (mule deer) that were in the yard behind the house every morning. They were coming in at night and eating the willow leaves that were falling. If I remember correctly, we shot two of them literally from the back door in our PJ's as breakfast was cooking. :D

:lol:   How cool is that?  If we could get all the deer to come TO the hunter and he doesn't even have to leave camp, how easy hunting would be! 
 
I had a pint of apple sauce that I just didn't feel sealed as it should, so I put it in the refrigerator. I like a scoop of applesauce on top of cottage cheese. By yesterday I had just a little left in the bottom of the jar, so I handed it to DH with a spoon. After he ate it he told me it was "too sweet" and asked what I put in it. My answer… apples. No sugar added, and he thought it was too sweet, lol!! I think it tastes great

I guess I should add a little less no sugar so it's not so sweet!
 
I got offered to hunt like that when the gal's husband dies. They get everything on 4 feet on their property, she offered to make coffee and let the kids play inside, then grab the tractor to bring the animal in to clean it up. Very nice woman, I think I lost her number though, but I remember how to get to her house.

Oh that sounds lovely! I've been wanting to brew cider for a while now, but have no idea how to get started. :(
 
It's much like making beer. The main thing is to keep everything CLEAN so the bad flavors don't have a chance to grow.

If you want to dip your toe in, I think Williams-Sonoma sells a 1-gallon cider kit.
 
Oh, and if you're not using store-bought juice, then some form of pasteurization or chemical cleansing so you don't end up with a deadly batch of e. coli brew. If starting with apples, make sure they're well-washed before crushing. Lots of folks get sick from ingesting apples picked up off the ground.
