What are you canning now?

We grow, dry / smoke, and grind all kinds of peppers & chili's every year. Nothing better than using your own seasonings, especially when you grind them just before use. :)

The past two days I have canned 16 pints of green beans, 16 pints of dilly beans, 16 pints of pasta sauce, and 9 pints of diced tomatoes. This afternoon I roasted 30 pounds of tomatoes, I'll get those put through the food mill tomorrow and start a batch of ketchup.

I still have another bushel and a half of tomatoes to get through over the next couple of days. At times like this, I could really use a 6 burner stove and an extra set of hands. lol

Came into a huge amount of tomato paste via my father in law, so I'm tempted to make up some ketchup or tomato soup. Never made either before, only sauce.

Also today is apple pie filling canning and hand pie filling (which is more like applesauce). I like to make homemade Pop-Tarts that aren't the chemical bomb that you buy at the store and having filling for them on hand would be so nice. :)

I have wished that so many times. and gas burners. My pots are so big that I can not fit two on the stove. I have to use a deep pasta pot for the hot water for the canning jars, then a six quart pot for the rolling boils...and I just keep the sterile jars hot in the dishwasher because there is no room for them on the stove.
 
How do you smoke them? Dad has a smoker and i have A TON of small jalapenos in my freezer, can I smoke those? I go through a lot of red pepper flakes and chili powder, matter of fact Im almost out of red pepper flakes. Girlfriend is coming down with a possible Salsa Contract with her work, so she is bringing down tomatoes, onions and bell peppers to make up some sample batches. BBQ Joe, please send instructions, very detailed ones in crayon, I have never smoked anything, but I have used a BBQ.

I will keep you all posted how salsa goes, popping the new houses canning cherry this friday, might even can corn and potatoes.
Did you blanch them first? how did you go about that?

That only works in spring and summer when you have a garden and don't want them. Only problem is it's not shooting season.
I have been tempted to beat one or two to death with my shovel after they ate an entire bed of something. Lol


Lol that reminded me of a joke...can't remember where I heard it though...

City boy comes over to pick up country girl for a date and as dad is giving him the 20 questions, the boy notices the collection of deer heads displayed on the wall. "I see you like to shoot innocent animal," the boy bravely questions... "Innocent?" the father askes., "You should see what they did to my corn!"

Reminded me of my dad lol, and the delicious buck that got caught in the wrong place at the wrong time... The sweet corn :p

Ooh! I had to have DH buy me a camping burner/stove thing when I burned out an element right in the middle of canning this year... It's awesome; has 2 burners that can fit HUGE pots on it, run with propane... Sure I have to put it outside because of the gas, but still... Awesome!!! :D
 
shortgrass, I have one of those camper stoves as well. Works great for my canning, and the house doesn't get all hot. Still have to carry the jars back and forth, but the exercise won't kill me I guess!
