What are you canning now?

Well, salsa verde and regular salsa didnt get made today, our girl talk last night ran until 3:00 am so we got a late start. But we did our first batch of Rotel, got 9 pints of it sitting on the counter, with 3 pints of diced tomatoes on the stove right now. Salsa will be made during the evenings this week after my extra child leaves and as the kids are going to bed. Then hunting this coming weekend, it is going to be a busy week. Carrots are ready now too, but they can wait to be dug up until I can find my kitchen again. Garden is expanding from 3 beds to 7 beds plus pallets to plant in around the coop thats being moved in 2 weeks from now, and viney plants on the ground. Started planning next years garden, since it will be hers and mine in my backyard. Time for a quick dinner then off to bed, 4 hours sleep isnt enough anymore.

Can you tell me how you garden in pallets? And what you plant in them? We're always looking for new things to try in the garden and that sounds interesting. Thanks!
 
What we have planned is to have 3 "rows" in our pallets, top row will be peas that can run up the mesh of the run. Second row will be garlic and short n sweet carrots, if it hangs into the run and gets nibbled it wont hurt. Bottom row might be flowers and herbs, havent decided yet. The theory is to take some landscaping fabric and make a well for the top and middle rows, i want to use another board to make a bottom, similar to a window box. It will need more water because it gets alot of sun, but if you plant smaller root system plants it should work. When we get it all started I will post pictures, we are running pallets around the run because we have a short chainlink fence and a neighbor that watches my family like we are tv. If we use the T posts they should stand, between that and framing for the run they should not tip over from weight, children and wind.

@WYNot When you make your Cherries with the alcohol do they ferment? My jar of Brandy Cherries has created pressure and is leaking the juice out. As I loosen the top, the liquid inside is bubbling. Good or not good?
 
It sounds good. You have friendly fruit.
If it is fermenting then you have the right things growing. The lid is acting like an air lock, it is letting the CO2 out under pressure so that the O2 can not get in.
I would store it in the refrigerator and slow the fermentation down.
..and get some icecream to spoon that over...
 
I did put it in the fridge last night - in a bowl with a piece of plastic wrap over it to keep everything out of the juice that is spilling out. I tasted the "spillage" and it is really good! I guess I overfilled it when I made the brandy cherries and didn't leave enough head space.
Thanks for the affirmation that I did right, I was second guessing myself.
 
Today was 12 half-pints of tomatillo salsa.... Clearing out the tomatillo plants and gotta use up all those peppers somehow. I think tomorrow may be red pepper jelly followed by a dice-n-freeze fest.
