What are you canning now?

I can finally post here it has been such a cold summer so my garden is slow going. I did get to can some dill pickles yesterday. My tomatoes are just starting to rippen so i hope to get them done in a few days.

Check ebay sometimes they are on there as well. Great investment for making your canning life easier. Clean up is easy too! I have done an assortment of bread & butter pickles, dill pickles, sweet chip pickles, cherry jam, sweet cherry jam, cherry peach, spiced blueberry peach, plum, blueberry, apricot, strawberry and some carrots. This is not including all the squash, blueberries and peaches in the freezer. Now I am waiting for my tomatoes to ripen and for apples to come in.

I forgot to mention that it's just me and DH here. I don't think we will eat all this.

My quartered tomatoes separated, too. But I don't mind b/c I use them in things that can use the liquid, and it's extra flavor in the dish.
 
Managed to get 14 1/2 pints of peach salsa done this weekend. Had another 6 cups of peaches for another batch but ran out of Cilantro and honey. So threw them in freezer for later. Chickens enjoyed the peels and trimmings.

Also, made Goat Cheese and Yogurt. Need to get on the 50+ Black figs that are waiting patiently. Anyone ever dry them? If so, do I just cut in half and place them skin side down?

Looks like everyone was pretty busy this weekend.

Boss went to Oregon to visit his sister who owns a Blueberry farm. Brought me back 12 pints of Blueberries. Anybody got good Blueberry recipes - any kind will be OK. Thinking may be some type of blueberry syrup.

place the berries in a single layer on a cookie sheet in the freezer. When berries are frozen package in zip lock bag. Then you can remove just the amount you need for the great recipes I'm sure someone will post.
