What are you canning now?

I would eat everyone of those beets myself!!

I must confess...I don't know how to can. I'm moving my mother up from Texas hopefully by next spring though and she has all of the equipment. I plan to ask her to teach me.

Jen4 I love your beets too! I did some pickled and some in the pressure canner and they are almost too pretty to eat. I'm hoping to do a few more jars yet this year once I get my jelly cupboard together and catch up on other stuff. Ugh! I need way more time for canning!

Now cocktail onions and jalapeno are another thing. He has 100 onions (I think he should have done 200) going now and we have discussed twice as many jalapenos plants for next year.

I commend you on getting 30 quarts done. Yes, I would say that you pickle them. I also like them plain cut up in a salad.

22 quarts of grape juice today -- so yummy!! I cheese cloth'd it so it wouldn't be pulpy and Oh My Goodness what a difference it makes!! The kids who wouldn't drink the pulpy grapejuice will NOT keep their mitts off the new grape juice!!
 
I got my peach pit jelly done today! SEVEN pints of recycled yumminess!!! No more canning for me today. Off to a hospital tour later with the homeschooling families, then some grocery shopping. I think I'll be buying the stuff today for canned chicken soup today though!! Will work on it the rest of the week or the weekend.

We have to move 250 chickens sometime this week, so we'll see how that pans out.

I have some nice round labels that can be done on the computer and customized to us. I use for all our canning stuff. Adds a special touch to Christmas gifts, plus I know what all the purple jars really have in them....hmmmm is this blueberry or boysenberry?

I just finished the last of my jelly and juice and I am finished canning dont have anything else to can so I guess im done. a friend is suppose to bring me some crabapples though to make them some crabapple jelly, Ive never made it but Im gonna try. our apple tree had a total of 4 apples on it this year so no apple butter or apple jelly from it. but I still have apple butter from last year I canned about 39 qrts of it. I did 40 qrts of tomatos this year put 10 qrts of beans in the freezer and made about 40 qrts of grape jelly and 5 qrts of grape juice. our garden didn't do too good too much rain this year.
 
I just finished 9 half pint jars of strawberry/blueberry jam (my fav) and 4 pints and 1 half pint of Banana jam. Since my dh loves bananas this one is for him.
