What are you canning now?

Life's been too stressful to want to cook or can lately.
I look at my enormous basil plants and feel guilty for letting them go to seed and not harvesting more.

so far this summer i've done 15 bottles of ketchup, 9 12oz jars of mulberry jelly, froze 42 qts of corn, 28 qts of broccoli, 9 pints of strawberry-banana freezer jam, 9 pints of strawberry freezer jam, canned 22 pints of pickle relish, 6 pints of bread+butter pickles (british), 6 pints of Bread+Butter pickles (microwave), and 32 jars of salsa. lots will be used as holiday gifts - still want to make peach anything. but times running out there, not sure if i'll find many freestone at a good price now.

love seeing all the interesting things being canned. lots of recipes for next year!
 
Just finished up a batch of Tdkmom's canned zucchini bread (Post #1720) and I hear them going pop, pop, pop! They smell good and I'm amazed this is can be made in a jar!

I'm so excited that I wrapped a hot one up in a towel and took it right over to my sister's house.

Lilshadow: Yes they seal themselves as they cool. Tdkmom says she has them for about 10 or 11 months! Go back to post 1720 (I think it was on page 171 or 172) and read a few pages where everyone talked about this bread. It was really easy to make and it looks pretty good!

These are definitely gifts - If we showed up at Christmas to family and friends homes without jars of this jelly they would throw us out and lock the door. We put it pour over 8 oz of cream cheese and serve on Wheat Thin crackers. It is gone in about 10 seconds flat, even the kids eat it!

I think we have already eaten about 8 jars of the Zucchini Bread. Husband fell victim the other night and ate half a jar in one evening.
