That's provided that you can keep from eating them right away.

I think we have already eaten about 8 jars of the Zucchini Bread. Husband fell victim the other night and ate half a jar in one evening.

I made 8 jars of the Banana Bread in a jar and 8 jars of Apple Bread and they turned out so good.

I'm down to 3 of the Banana left cause DH and Kiddos are really enjoying it.

well I just canned 9 quarts of super hot lite your mouth on fire hot sauce for the dh then 9 pints of mommy's mega mild sauce for me and the kids today. Did 12 1/2 pints of wild plum jelly and 3 quart jars of wild cherry jelly. Did I mention I am sooooo tired? lol lol
Does anyone have a good recipe for large batches of dill pickles? The quick method that usually takes about a day not the brine soak method? Anyone have a dilled pepper relish recipe?

Here is what I copied down last night:
/3 c. shortening 2 2/3 c. sugar 4 eggs
2 c. canned pumpkin 2/3 c. water 3 1/3 c. flour
1/2 tsp. baking powder 2 tsp. baking soda
1 tsp. cinnamon 1 tsp. ground cloves 1 1/2 tsp. salt
2/3 c. nuts
Cream shortening and sugar. Beat eggs, pumpkin and water. Sift together flour, baking powder, soda, salt and spices. Add to pumpkin mixture. Stir in nuts. Pour mixture into greased wide mouth jars filling 1/2 full. Bake at 325 degrees for 45 minutes. When done remove 1 jar at a time and wipe sealing edge with paper towel or cloth and screw cap on tightly. The heat will vacuum seal the jar and the bread will keep for up to 1 year. Makes 8 pints.
VARIATIONS:2 c. shredded apples or carrots
1 can whole cranberry sauce
1 bag whole ground fresh cranberries
2 c. mashed bananas
2 c. fresh peaches 1 3/4 c. applesauce plus 1/4 c. pineapple 2 c. shredded zucchini
1 3/4 c. applesauce plus 1/4 c. raisins
I plan on making these tomorrow along with the apple/jalapeno jelly

Yes, 2/3 C. shortening.....I used butter-flavored shortening.

I'm getting ready to do more tomato sauce, then work on the peppers. I'm getting burned out on canning (over 300 jars of stuff) and getting stressed too. My hair is falling out!! I gotta slow down soon. I just hate to see anything go to waste and me go bald

No Kidding!!! Seems I wake up and go to bed just starting or finishing a batch of something!!

I started keeping a running tally (spreadsheet) of everything I make and will continue to every year-so I can see what I made vs. what I either had too much of or didn't have enough of.
