What are you canning now?

If I recall, the breads in a jar are only good for about 6 months. I have to post this because everyone is so excited about these new recipes. And I'm not trying to be a bummer, but just want to let you know what I have experienced with breads in a jar............

I have some that I did last summer, and when I open them now and even months back, they have a funky smell. They taste just fine, but I can't get past the funk...I have about 4 dozen (at least) that I will be putting down the garbage disposal...I just don't want to risk it. I keep trying to eat 'em but can't. My kids don't smell it, but my husband and I do. Of course since my twin pregnancy I have had mega nose.....

But since DH smells it, I know it must be obvious! They taste just fine, but the have the same aftertaste as the smell.

They were wonderful when I first canned them, however, I think that they are too old. They don't seem to have the life expectancy that I prefer-I'd rather bake fresh bread if they only last 6 months.

Just a note to those of you canning 'em. Try to use them up within 6 months.

Today, I am canning a few more jars of butter.

I just follow the recipe from the Ball Blue Book. We did this last year and it worked. We cut the potatoes into chunks before cooking.
When we use them , we found the best is to put them on a baking sheet or if you have some stoneware, that is better, spray with cooking spray and then bake them until brown. They taste like fried potatoes.

I need a recipe for jalepeno jelly and something different with 3 bags roma tomoatos I have already done salsas, whole, spaghetti sauce, would like to do something different any recipe's or ideaqs please?!!!

Here is a recipe for pepper jelly that you might like. It's a favorite amoung our family and friends.

I get my dried Apricots from Costco and they are not that expensive. This has become a signature jelly for me and I have sold tons of it at $5.00 for 8 oz jar. It has a wonderful balance of sweet and hot. Serve as an appetizer on a Wheat Thin cracker with cream cheese and small dollop of jelly on top and there will be NONE left.

Apricot Pepper Jelly

1 cup red bell pepper strips
2 cups cider vinegar
1/3 cup jalapeno peppers, rinsed; stems & seeds removed*
1 1/4 cups (6 oz bag) dried apricot halves, finely slivered
6 cups sugar
1 pouch (3 oz) liquid pectin
5 drops red food color (optional - I don't use)
*If fresh are notavailable, 1/2 cup drained canned (or bottled) whole jalapeno peppers, rinsed, stem & seeds removed.

Directions

Combine pepper strips, vinegar & jalapeno peppers in an electric blender. Process stop-and-go fashion until somewhat ground, but small chunks remain. Combine with apricot strips & sugar in saucepan; bring to a boil. Boil 5 minutes. Remove from heat; skim off any foam. Cool 2 minutes, then mix in pectin & food color (if using). Pour into sterilized jars & fasten lids. Process in boiling water bath for 15 minutes. Cool.

I was canning peaches and nectarines last night and I decided to put a whole clove in the bottom of the jars before pouring in the fruit.

Anyone done this before??

Eta: I made them into preserves.

Got apples cut up and sitting in lemon juice spiked water waiting to be made into jelly when I get home from work. Found its easier for me to prep night before and prepare next night so I'm not eating dinner at 10:00pm and so tried I can't stand it.

Note to self - Win Lotto so I can stay home and do more canning
