What are you canning now?

This weekend my parents were here and my mom and I canned some stuff.
Pear Butter
Apple Butter
Whiskeyed Pears (didn't have Brandy so improvised)
Pears in lite syrup (something my mom used to do for my dad all the time)
Apple Pie Filling
Pepper Onion Relish

I hope to do some tomato sauce and some jams in the next little bit.

I am doing jam. jelly, butter baskets for Christmas this year.
 
Lockedhearts-can you post your apple pie filling recipe? Sounds like you and your mom had a fullfilling weekend?

I want to put up some apple pie filling myself. Just wanted to see if anyone had a different recipe than the Blue Book one? I am not an apple pie fan but when I throw in a large handful of black walnuts.......

Actually I used the Peach Pie Filling recipe from the Blue Book and just used Apples instead. It tasted really good. I did add a couple teaspoons of Vanilla to it, made it better.

Don't Walnuts or Pecans in anything make it better

thanks lockedhearts, and yes, nuts in most things make them much better for us nut lovers. The mill is collecting black walnuts in the next couple weeks and then the nut company will process them and return them to mill for sale. I usually stock up on my bl. wal. then for the winter. Yum. Can't beat the price so I never purchase at the stores.

I also chopped green peppers and sweet peppers. They are in the freezer layed out in single layer to freeze.

Forgot the rooster I processed this morning!

I ended up with 5 pts. green peppers and 4 pts sweet peppers.

my DH told me to go out and buy a pressure cooker so I can put up our surplus...I have a water bath pot which I use but really need pressure cooker if I want to get serious about preserving....is the ball book really reliable???dont want to waste time and veggies if they aren't going to taste good...Pam

Everything I've made so far has been wonderful. I made the vegetable soup and brought a jar to my office so that I'll have a healthy "emergency" meal the next time I forget lunch! I ate 2 of the pint jars already because they either didn't seal or I didn't feel like running another canner load. It's very hearty, very tasty, and - as DBF said - "very vegetable-y".
 
Now I can't wait to get a pressure cooker for next year! I think I will ask for that for Christmas

I want to make soups and meats now that I tried my hand at my first hot water bath canning, you gals have really inspired me to do it all now.

What is the difference between a pressure canner and a pressure cooker - cant you use either for both....

If you were to buy a pressure cooker/canner - what make - model - size would you buy?

this is my 3rd year canning - hot water bath. 1st year all i did was salsa - lots of salsa! last year i did tomato sauce, cherry jam, peach jam, peach butter, tomatoes, and microwave bread-and-butter pickles; froze cherry pie filling, broccolli, spaghetti sauce and corn. this year i have expanded my comfort zone: i made 3 pints of pizza sauce, 3 pints no-sugar peach jam, 12 half pints peach jelly, 4 12 oz. jars blackberry jelly, 4 pints cucumber sandwich pickles, 12 jars bread-and-butter pickles, and 15 quarts of tomato juice. may not seem like alot for some of you canning masters, but for me - whew! and there are still tomatoes in the garden, lots of green peppers and beets.

there are so many recipes i'd like to try, so i'm thinking of getting a pressure cooker for next but they kind of scare me. i remember being a kid and having a neighbor's blow up on her. i'm sure they have changed over the past 30+ years, but i could still use some encouragement and wisdom in picking a good one.
