What are you canning now?

I just finished 16 cans of blueberry jam, juice concentrate and blueberry syrup. Also canned 4 jars of Blackberry syrup.

This afternoon I made some tomato basil soup, and did 2 12oz jars for a friend of mine who had surgery and is on a liquid diet for awhile.

Tomorrow begins salsa and tomato sauce. I have 6 lbs of heirloom tomatoes ready!
 
Well after many requests and compliments I am finally getting around to sharing my pickle recipe with fellow BYCers. I do hope that everyone enjoys it as much as we do.

Dill Pickles

Place dill sprigs into jars and pack with pickles to desired likeness
Add two 1 grain saccharin tabs (we use granulated Stevia in the raw, 1/4 tsp. per quart)
1 heaping tsp. pickling salt
1 clove garlic smashed and minced

Fill jar 1/2 full with white vinegar and 1/2 with water

Set jars in canner and fill with water to "neck" of jars

Bring to a rolling boil and boil for no more than 1 minute.
Turn off heat and let cool in pot for 5 minutes.
Remove and let completely cool.

Pickles do not have to rest, you can put them in the fridge and eat!

p.s. ~ we only use the white pickles and always pick when they are just about 3" in length, brings out the best flavor and not too cucumberish. You could probably do the same with green ones as well.

Yes, make the jelly! It's deliciously tart and so delicately colored and beautiful in the jar. It (and Wild Plum Jelly) are my absolute favorites for filling jelly rolls and muffins. I would give my right arm for crabapples to make jelly!
 
Guess what!!!!!!!!? I got some blueberries!!!!! Now I can make a batch of blueberry jam!!!! Woooooo-hooooo!!!! Got them at Dollar Tree. Then I walked next door to Wal-mart and saw they had them for way more money!

lol. well the crabapples aren't in yet, they just started budding. I got two trees in my front yard.

My neighbor has a crabapple tree and is not doing anything with them this year so she told me this morning to come get them.. Look out jelly here I come!!
