What are you canning now?

Good morning to all of you - as I mentioned off work this week and have been so busy. I need a vacation from my vacation

We have managed to put up 24 1/2 pints of the Blackberry Chipotle Sauce and it is wonderful. We took some to market yesterday and sold 4 jars. I sampled with a cracker and cream cheese and people loved it. This is a very laid back market and only may be 2 dozen people come through but it pays for a couple bags of chicken feed.

Anyway, just a quick check in to say I'm still here and just really busy. We picked 21.5# of Apricots that need to get put up today in the afternoon once the heat really kicks in.

Back to work next week so more time to catch up with everyone.

I must say that everyone's canning efforts here look and sound delicious.

lol. well the crabapples aren't in yet, they just started budding. I got two trees in my front yard.

I think they are considered to be more of a nu-sense then actually tasting bad it is a type of fruit after all can't taste that bad.

Me too! My cukes are 2-3 weeks earlier this year than before. I have canned 80+ jars of Dill, Kosher and bread & butter already. I do let some cukes get big and give them to the chickens for treats. The ducks and geese eat the whole thing as well as the zucchini that get by me and grow bigger than a baseball bat. *sigh*
 
Ripped out a tomato plant that looked to be gotten by blight... and I mean... not doing well at all. Also looked like the tomatoes got squishy before they ripened. So the chickens are out enjoying that plant.

But I did have 6 lbs of extra ripe purple cherokee tomatoes crying out for me to do SOMETHING.... so I grabbed a handful of some of my thai chilies and an couple of onions I was drying from the garden still and WALLA... SALSA!!!

I canned 1 12 oz jar.... brought it to my neighbor and managed to eat all the rest of it with dinner last night, then a snack with chips, then on my ranch salad this afternoon and I have less then 8 oz to myself left and I bought another bag of chips.

I LOVE spicy!!!!!!!!!!!

Getting up tomorrow at 7am to go blackberry picking in the morning. They are only open 4 hours a week for the rest of the season as everything is almost done producing! That means I may not have anymore blackberry jam to have this year... and did I mention I have made 28 jars of BB Jam, and there are only 2 jars left here, and 1 jar of syrup!

ARGH!!!!!!!!!

Why must these seasons pass so quickly!!!

Anyone know what to do with black currents. A very wonderful woman I met at the farmers market offered all that remained on her bushes. I went over there yesterday evening and picked 2 quarts....now what to do with them?? I'm thinking jelly.

Is it a toast kind of jelly or more for meat glazes?? I tasted one of the berries and it tastes kind of woodsy...pine.....kind of like the taste of gin.
 
ChickenStalker: It's for toast/bread - sweet. We actually made it as a jam/jelly. Juice it for jelly, but cook some whole fruit with it so you get a little fruit bits in the jelly. You can buy black current in the store (wegmans, if you have one). The best brand is Hero (swiss made).

I LOVE currant jelly or jam! Divine on an English muffin. Also love gin if anyone has recipes
